A week of eating: trying new things!

New things to eat, new things to listen to (yes, I finally joined the vinyl family!). In today’s post: Irish spice bag, fried rice with baked oyster mushrooms, and all-vegan Swedish kanelbullar.


All-vegan Swedish kanelbullar

Fluffy sweet buns with loads of butter, cinnamon, and sugar. I love to make yeast bakes, they always hit the spot for me. But - this time, I tried a completely new recipe with some interesting steps in the whole process.

The biggest plot twist here is - once you have your dough kneaded, you get a beautiful slice of vegan butter, put it in the center of the ball of dough, and… you knead again, for about 10 minutes, until the butter is completely absorbed. Does it make a difference? I would say: yes, those were the best sweet buns I’ve probably ever made. Not gonna lie, at first I had a heart attack because the butter was all warm and sticky and it made the dough sticky as well. So, you just need to knead and not stress - it is going to be good in the end.

Fried rice with baked oyster mushrooms

Get a big pan, heat up a little bit of oil - then fry one chopped white or preferably red onion, bell paprika plus any other veggie you like. After a few minutes, add a can of chickpeas then 3-4 portions of cooked rice. The seasoning: keep it rather simple; salt, pepper, coriander seeds, cumin. Some recommendations: add a few raisins as well!!! mixed nuts! spring onion! Serve with baked oyster mushrooms (cover the mushrooms in oil, soy sauce, agave syrup, onion powder, smoked/sweet paprika, salt, pepper; bake for about 15 minutes, 220℃).

To be honest, I have never heard of it in my life - until now, but so tasty! And easy to make however pretty time-consuming when you cook this completely from scratch. (Yes, I learned about spice bag via Tiktok, sorry.)

So, first of all, I cannot judge on how authentic my version is, but I did some research.

Firstly, you need French fries. I baked my potatoes the same way as always, but only with oil, salt, and pepper.

Secondly, fry one onion and two bell peppers in a big pan until nice and soft. In the meantime, mix your seasoning: onion powder 1 teaspoon, cumin 1/2 teaspoon, a pinch of cinnamon, sugar, salt, pepper. Set that aside. (If you want it spicier, I think it’s safe to add a little bit of chili pepper or top it with sriracha later.)

Lastly, fake chicken. I used store-bought vegan gyros chunks and those were perfect. Fry these as well on a seperate pan to make them extra crispy, not soggy. And when everything’s ready - your French fries, onion + bell pepper, plant-based meat - mix it all together in the bigger pan and add the seasoning!
