Easy-peasy flatbread

Oh… that was good! Easy to make, perfect as a side for homemade curry. Do recommend.

The recipe… (for 2 flatbreads)

What you need:

  • 1 cup of wheat flour,

  • a large pinch of salt,

  • 1 tablespoon of olive oil,

  • about 1/4 cup of warm water,

  • optional to add: dried coriander leaves (or/and seeds), onion powder.

Mix all those ingredients in a bowl, knead for a minute to get a nice ball of dough.

Did I just (kind of) rhyme? Divide the dough into two portions and roll out.

Preheat a dry pan and cook until ready with no oil (both sides).

Garlic + parsley olive oil

You can decorate your beautiful flatbreads with coarse salt - as well as garlic-parsley olive oil.

Get a small bowl. Mix about a handful of fresh parsley - finely choped, with one small clove of garlic (also finely choped). Add a little bit of olive oil. Mix, mix, mix. Optionally, add more salt, pepper or maybe even chili flakes if you like it extra spicy. Cover the flatbreads with olive oil using a kitchen brush.

Note: the garlic-parsley-maybe-chili-flakes olive oil is also perfect to eat with toasted bread or pizza! Or cover your focaccia with it - so many options. Personally, I truly adore this combination of flavors.
